Inspired by how her mom would “have fun with sugar,” Madison Lee started whipping up yummy treats at a young age. Her passion for baking led her to the Institute of Culinary Education where she studied with chefs, bakers and world-renowned sugar artists who helped her become of the nation’s leading sugar sculptors. Yes, a sugar sculptor.
Named one of North America’s Top 10 Cake Artists by Dessert Professional magazine, Madison Lee’s Cakes creates sugar masterpieces at her two New York locations, in the heart of Brooklyn’s Park Slope neighborhood and in the Garment Center. Her portfolio of cakes include sugar flowers, hand-painted designs and sculpted masterpieces.

With an eye for classic style, and adding a modern twist, Madison varies designs you may have otherwise seen before. She wants her wedding cakes to look original, and they are. Her guiding principle is that no two of her wedding cakes will ever be the same. “I pride myself on the fact that every cake I make will be unique to the person.”
Since 2009 Madison has been creating cakes at her own shop for all sorts of occasions, and whether it has elegant piping, delicate sugar flowers or hand-painted details, she will make a one-of-a-kind masterpiece that won’t leave you, or your guests, disappointed. She can can create everything from a traditional French Opera cake to a nostalgic funfetti cake. Flavors range from fan favorites (mixed berry, red velvet and chocolate ganache) to the more contemporary (salted caramel crunch and cookies and cream). Madison Lee’s Cakes wedding cakes have graced receptions at venues as varied as the Ganesvoort Hotel and Housing Works Bookstore, and have been featured in a myriad of media outlets from BRIDES and the knot to Brooklyn magazine, Good Morning America and NY 1.
Asked what her top tip for couples on designing their wedding cake, Madison told Twirl New York, “My advice would be to come with an open mind, an idea of what you love and what you don’t like, and most importantly, arrive ready to have a little fun!”
